Jerk Seasoning – The Fiery Heartbeat of Jamaica

Where Jerk Comes From

Jerk cooking traces back to the Maroons, enslaved Africans who escaped into the Blue Mountains of Jamaica and developed techniques to preserve and flavor meat with local spices and slow-cooking over pimento wood.

What started as survival became a tradition—jerk is now one of Jamaica’s most iconic exports, and jerk stands can be found everywhere from Kingston to the streets of New York and London.

 

What Makes Jerk, Jerk?

Authentic jerk seasoning is a blend of fire and flavor. It’s not just hot—it’s complex. The key ingredients usually include:

  • Scotch bonnet peppers – fiery and fruity

  • Pimento (allspice) – warm and fragrant

  • Thyme, scallions, garlic, and ginger – aromatic base

  • Brown sugar – for balance

  • Soy sauce, vinegar, lime juice – for that tangy kick

The result? A marinade or dry rub that infuses meats (especially chicken, pork, or fish) with bold, smoky, spicy flavor.

 

Make Your Own Jerk Seasoning (Wet Marinade)

Ingredients:

  • 4 Scotch bonnet peppers (seeds removed for less heat)

  • 1 tbsp ground allspice

  • 1 bunch scallions (chopped)

  • 1 onion (chopped)

  • 3 cloves garlic

  • 1 tbsp fresh thyme (or 1 tsp dried)

  • 1 tbsp ginger (grated)

  • 2 tbsp soy sauce

  • 2 tbsp brown sugar

  • Juice of 1 lime

  • 1 tbsp vinegar

  • Salt and black pepper to taste

 

Instructions:

  1. Blend all ingredients in a food processor until smooth.

  2. Rub generously over meat (use gloves—it’s spicy).

  3. Let marinate for at least 4 hours, preferably overnight.

  4. Grill over open flame or charcoal for authentic smoky flavor.
